Certain empathy, an amicable and emotional relationship, one could say, exists between Peruvian sand their food –particularly with cebiche. Ancient Peruvians always took mouth-puckering tumbos and fiery ají to flavor their fresh catch while they were fishing. Later, the Spanish introduced lemons, onions and garlic, and their Moorish slaves who were fond of eating acid foods named the dish “sebech”. There are many theories on the origin of cebiche and on its correct spelling, but the truth is that seven out of ten Peruvians consider cebiche as emblematic of Peru.
